Ingredients:

  • 1 cup (240ml) cottage cheese, full-fat or low-fat
  • 2 large eggs
  • 2 tablespoons (30ml) milk
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon (4g) baking powder
  • 1/4 teaspoon (1g) salt
  • 1 tablespoon (15ml) butter, unsalted, melted for greasing

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch baking pan with melted butter.
  2. In a mixing bowl, whisk together the cottage cheese, eggs, milk, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing. Let the batter rest for 5 minutes.
  5. Pour the batter into the prepared baking pan, spreading evenly.
  6. Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Let cool slightly before slicing and serving.
