Ingredients:
- 1 cup (240ml) cottage cheese, full-fat or low-fat
- 2 large eggs
- 2 tablespoons (30ml) milk
- 1 teaspoon (5ml) vanilla extract
- 1/2 cup (60g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon (4g) baking powder
- 1/4 teaspoon (1g) salt
- 1 tablespoon (15ml) butter, unsalted, melted for greasing
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9-inch baking pan with melted butter.
- In a mixing bowl, whisk together the cottage cheese, eggs, milk, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing. Let the batter rest for 5 minutes.
- Pour the batter into the prepared baking pan, spreading evenly.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
