Ingredients:

  • 1 cup Full-Fat Cottage Cheese (drained slightly)
  • 2 Large Eggs
  • 1/4 cup All-Purpose Flour (or Oat Flour)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon (Optional)
  • 1/8 teaspoon Salt
  • 1 tablespoon Unsalted Butter or Neutral Oil (for cooking)
  • Maple Syrup (to taste, for serving)
  • 1/2 cup Fresh Berries (for topping)

Instructions:

  1. Place the cottage cheese, eggs, vanilla extract, and salt into a high-speed blender or food processor.
  2. Process on high speed until the mixture is completely smooth and creamy—no curds should be visible. Scrape down the sides as needed.
  3. Add the flour, baking powder, and cinnamon (if using) to the blender. Pulse just until the dry ingredients are incorporated. Do not overmix once flour is added.
  4. Heat a non-stick pan or griddle over medium-low heat. Lightly grease the surface with butter or oil.
  5. Pour 1/4 cup of batter per pancake onto the hot surface.
  6. Cook for 2–3 minutes until small bubbles appear on the surface and the edges look set.
  7. Gently flip the pancakes and cook for another 1–2 minutes until golden brown and cooked through.
  8. Keep finished pancakes warm while you cook the remaining batter. Serve immediately drizzled with maple syrup and topped with fresh berries.
