Ingredients:
- 1 cup Full-Fat Cottage Cheese (drained slightly)
- 2 Large Eggs
- 1/4 cup All-Purpose Flour (or Oat Flour)
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Cinnamon (Optional)
- 1/8 teaspoon Salt
- 1 tablespoon Unsalted Butter or Neutral Oil (for cooking)
- Maple Syrup (to taste, for serving)
- 1/2 cup Fresh Berries (for topping)
Instructions:
- Place the cottage cheese, eggs, vanilla extract, and salt into a high-speed blender or food processor.
- Process on high speed until the mixture is completely smooth and creamy—no curds should be visible. Scrape down the sides as needed.
- Add the flour, baking powder, and cinnamon (if using) to the blender. Pulse just until the dry ingredients are incorporated. Do not overmix once flour is added.
- Heat a non-stick pan or griddle over medium-low heat. Lightly grease the surface with butter or oil.
- Pour 1/4 cup of batter per pancake onto the hot surface.
- Cook for 2–3 minutes until small bubbles appear on the surface and the edges look set.
- Gently flip the pancakes and cook for another 1–2 minutes until golden brown and cooked through.
- Keep finished pancakes warm while you cook the remaining batter. Serve immediately drizzled with maple syrup and topped with fresh berries.
