Ingredients:

  • 1 sheet (approx. 250g) Pre-rolled Puff Pastry, chilled
  • 2 tbsp All-purpose flour
  • 8 oz (225g) Brie Cheese
  • 1/2 cup (120ml) Whole Berry Cranberry Sauce
  • 1/4 cup (30g) Chopped Walnuts
  • 2 sprigs Fresh Rosemary, finely minced
  • 1 tsp Flaky Sea Salt

Instructions:

  1. Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the cold puff pastry. Use a pizza cutter to slice the dough into 24 even squares, roughly 2.5 inches each.
  2. Place the pastry squares onto your parchment lined baking sheet, leaving at least half an inch between them.
  3. Cut the cold brie into small pieces, keeping the rind on for structural support. Place one piece into each pastry square.
  4. Top each cheese cube with approximately one teaspoon of whole berry cranberry sauce.
  5. Slide the tray into the center rack of the oven and bake for 10–12 minutes until the pastry is deep golden and the cheese is melted.
  6. Remove from oven and immediately garnish with chopped walnuts, minced rosemary, and a pinch of flaky sea salt.
