Ingredients:
- 4 large eggs
- 1/2 cup cottage cheese

Instructions:
- Crack the eggs into a mixing bowl and whisk until fully combined. Season with salt and pepper.
- Gently fold the cottage cheese into the egg mixture using a spatula.
- Place a non-stick skillet over medium-low heat and melt the butter until foamy.
- Pour in the egg and cottage cheese mixture, let it sit undisturbed for about 10-20 seconds. Gently stir with a spatula and allow the uncooked eggs to flow to the bottom.
- Cook for about 4-5 minutes, stirring occasionally, until the eggs are softly set but still creamy.
- Remove from heat, garnish with chives or parsley if desired, and serve immediately.
