Ingredients:

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 2 tablespoons butter

Instructions:

  1. Crack the eggs into a mixing bowl and whisk until fully combined. Season with salt and pepper.
  2. Gently fold the cottage cheese into the egg mixture using a spatula.
  3. Place a non-stick skillet over medium-low heat and melt the butter until foamy.
  4. Pour in the egg and cottage cheese mixture, let it sit undisturbed for about 10-20 seconds. Gently stir with a spatula and allow the uncooked eggs to flow to the bottom.
  5. Cook for about 4-5 minutes, stirring occasionally, until the eggs are softly set but still creamy.
  6. Remove from heat, garnish with chives or parsley if desired, and serve immediately.
