Ingredients:
- 2 large cucumbers (about 1.5 lbs / 680g), thinly sliced
- 1/4 medium red onion (about 1 oz / 28g), thinly sliced
- 1/4 cup fresh dill, chopped (about 0.25 oz / 7g)
- 1/2 cup sour cream (4 oz / 113g)
- 2 tablespoons apple cider vinegar (30ml)
- 1 tablespoon mayonnaise (0.5 oz / 14g)
- 1 tablespoon olive oil (15ml)
- 1/2 teaspoon sweetener (Erythritol or Stevia blend) (2.5ml)
- 1/2 teaspoon salt (2.5ml)
- 1/4 teaspoon black pepper (1.25ml)
Instructions:
- Thinly slice the cucumbers and red onion using a sharp knife or mandoline.
- Place the sliced cucumbers and red onion in a large mixing bowl. Add the chopped fresh dill.
- In a separate bowl, whisk together the sour cream, apple cider vinegar, mayonnaise, olive oil, sweetener, salt, and pepper until well combined.
- Pour the creamy dressing over the cucumber and onion mixture. Gently toss to coat evenly.
- For best results, cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the creamy dill cucumber salad chilled.
