Ingredients:

  • 2 large cucumbers (about 1.5 lbs / 680g), thinly sliced
  • 1/4 medium red onion (about 1 oz / 28g), thinly sliced
  • 1/4 cup fresh dill, chopped (about 0.25 oz / 7g)
  • 1/2 cup sour cream (4 oz / 113g)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 tablespoon mayonnaise (0.5 oz / 14g)
  • 1 tablespoon olive oil (15ml)
  • 1/2 teaspoon sweetener (Erythritol or Stevia blend) (2.5ml)
  • 1/2 teaspoon salt (2.5ml)
  • 1/4 teaspoon black pepper (1.25ml)

Instructions:

  1. Thinly slice the cucumbers and red onion using a sharp knife or mandoline.
  2. Place the sliced cucumbers and red onion in a large mixing bowl. Add the chopped fresh dill.
  3. In a separate bowl, whisk together the sour cream, apple cider vinegar, mayonnaise, olive oil, sweetener, salt, and pepper until well combined.
  4. Pour the creamy dressing over the cucumber and onion mixture. Gently toss to coat evenly.
  5. For best results, cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve the creamy dill cucumber salad chilled.
