Ingredients:

  • 1 medium head green cabbage, cored and shredded (about 6 cups)
  • 1 large carrot, peeled and shredded (about 1 cup)
  • 1/2 medium onion, finely chopped (about 1/2 cup)
  • 1/4 cup chopped fresh parsley
  • 1 cup mayonnaise
  • 2 tablespoons granulated sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Shred cabbage, carrots, and finely chop onion. Chop parsley.
  2. In a large mixing bowl, combine shredded cabbage, carrots, onion, and parsley. Toss to combine.
  3. In a small mixing bowl, whisk together mayonnaise, sugar, apple cider vinegar, Dijon mustard, celery seed, salt, and pepper until smooth.
  4. Pour the dressing over the vegetable mixture. Toss gently to coat all ingredients evenly.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Stir before serving. This coleslaw recipe tastes better after chilling!
