Ingredients:
- 1 medium head green cabbage, cored and shredded (about 6 cups)
- 1 large carrot, peeled and shredded (about 1 cup)
- 1/2 medium onion, finely chopped (about 1/2 cup)
- 1/4 cup chopped fresh parsley
- 1 cup mayonnaise
- 2 tablespoons granulated sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon celery seed
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- Shred cabbage, carrots, and finely chop onion. Chop parsley.
- In a large mixing bowl, combine shredded cabbage, carrots, onion, and parsley. Toss to combine.
- In a small mixing bowl, whisk together mayonnaise, sugar, apple cider vinegar, Dijon mustard, celery seed, salt, and pepper until smooth.
- Pour the dressing over the vegetable mixture. Toss gently to coat all ingredients evenly.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Stir before serving. This coleslaw recipe tastes better after chilling!
