Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • ½ tsp onion powder
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, and paprika.
  2. Heat olive oil and butter in a 12 inch skillet over medium high heat. Once the butter foams, sear chicken for 5-7 minutes per side until deep golden brown.
  3. Remove chicken to a plate.
  4. Reduce heat to medium. Add minced garlic to the pan drippings and sauté for 1 minute until fragrant.
  5. Pour in heavy cream and whisk in Italian seasoning and onion powder.
  6. Simmer for 3-5 minutes until the sauce thickens slightly, then stir in Parmesan cheese until melted and smooth.
  7. Return chicken and pan juices to the skillet.
  8. Spoon sauce over the meat and simmer for 2-3 minutes until the internal temperature reaches 165°F (74°C).
  9. Garnish with fresh parsley.
