Ingredients:
- 1 cup Old-Fashioned Rolled Oats (not quick-cook)
- 2 cups Water or Milk (Dairy/Non-Dairy)
- Pinch Sea Salt
- 4 Tbsp Natural Peanut Butter (60 ml)
- 2 tsp Maple Syrup or Honey (10 ml)
- 1 tsp Chia Seeds (optional)
- 1/2 tsp Vanilla Extract (2.5 ml)
- 1 medium Banana, sliced
- 1 Tbsp Chopped Peanuts (for topping)
- 1 tsp Peanut Butter (for drizzle)
Instructions:
- Combine Liquid and Oats: In a medium saucepan, combine the water/milk, rolled oats, and the pinch of sea salt.
- Bring to a Boil: Place the saucepan over medium-high heat and bring the mixture to a gentle, rolling boil, stirring occasionally.
- Simmer and Thicken: Immediately reduce the heat to low. Allow the oats to simmer gently, uncovered, for 5 to 7 minutes. Stir frequently to prevent sticking and encourage a creamy texture. The oats should be thick enough to coat the back of the spoon.
- Remove from Heat: Once the oats are cooked and creamy, remove the saucepan completely from the hob.
- Stir in Flavourings: Stir in the 4 tablespoons of peanut butter, maple syrup (or honey), chia seeds (if using), and vanilla extract. Stir vigorously for 30 seconds until the peanut butter is fully melted and incorporated, creating a homogenous, rich porridge.
- Portion: Divide the creamy peanut butter oats evenly into two serving bowls.
- Garnish: Arrange the sliced banana attractively over the top of each bowl.
- Finish: Drizzle with the extra teaspoon of peanut butter and sprinkle the chopped peanuts for texture. Serve immediately while warm.
