Ingredients:
- 2 cups Full-Fat Greek Yogurt
- 1 cup Ripe Bananas, mashed (about 2 large)
- ½ cup Natural Peanut Butter
- 2 Tbsp Unsweetened Cocoa Powder
- ¼ cup Maple Syrup or Honey
- 1 tsp Vanilla Extract
- ½ cup Melted Dark Chocolate (for coating)
- 2 tsp Coconut Oil (for coating)
Instructions:
- Combine the Full-Fat Greek Yogurt, mashed Bananas, Natural Peanut Butter, Unsweetened Cocoa Powder, Maple Syrup (or Honey), and Vanilla Extract in a large bowl or blender. Blend or whisk thoroughly until the mixture is completely smooth and homogeneous.
- Pour the mixture evenly into 8 standard popsicle molds. Insert the popsicle sticks.
- Transfer the molds to the freezer and freeze for a minimum of 4 hours, or until the popsicles are completely solid.
- Prepare the coating: In a small, deep bowl, combine the ½ cup Melted Dark Chocolate and 2 tsp Coconut Oil. Stir until smooth. The coconut oil helps the shell harden quickly and provides the satisfying 'shatter' texture.
- Carefully remove the frozen popsicles from their molds. Dip each pop quickly into the chocolate mixture, turning to coat evenly. Allow the excess coating to drip off. The shell will set almost instantly.
- Serve immediately or wrap individually and store in the freezer.
