Ingredients:
- 2 medium cucumbers, sliced thin (about 1 pound / 450 grams)
- 1 small onion, thinly sliced (optional)
- 1 cup distilled white vinegar (240 ml)
- 1 cup water (240 ml)
- ½ cup granulated sugar (100 g)
- 2 tablespoons kosher salt (30 g)
- 1 teaspoon mustard seeds
- 1 teaspoon black peppercorns
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 garlic clove, peeled and sliced
Instructions:
- Wash cucumbers and slice them thinly. If using, slice the onion thinly as well.
- In a mixing bowl, combine vinegar, water, sugar, salt, mustard seeds, black peppercorns, red pepper flakes, and garlic. Whisk until sugar and salt are dissolved.
- Layer the cucumber slices and onion in the mason jar. Pour the brine over the cucumbers until completely submerged.
- Seal the jar tightly and shake gently to mix. Refrigerate for at least 1 hour (ideally overnight) to let the flavors meld.
- Enjoy within 2 weeks for the best crunch and flavor.
