Ingredients:

  • 2 medium cucumbers, sliced thin (about 1 pound / 450 grams)
  • 1 small onion, thinly sliced (optional)
  • 1 cup distilled white vinegar (240 ml)
  • 1 cup water (240 ml)
  • ½ cup granulated sugar (100 g)
  • 2 tablespoons kosher salt (30 g)
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 garlic clove, peeled and sliced

Instructions:

  1. Wash cucumbers and slice them thinly. If using, slice the onion thinly as well.
  2. In a mixing bowl, combine vinegar, water, sugar, salt, mustard seeds, black peppercorns, red pepper flakes, and garlic. Whisk until sugar and salt are dissolved.
  3. Layer the cucumber slices and onion in the mason jar. Pour the brine over the cucumbers until completely submerged.
  4. Seal the jar tightly and shake gently to mix. Refrigerate for at least 1 hour (ideally overnight) to let the flavors meld.
  5. Enjoy within 2 weeks for the best crunch and flavor.
