Ingredients:

  • 2 fillets of flounder (approximately 6 ounces each, 170 grams)
  • 1/2 cup (60g) all-purpose flour
  • 1 large egg
  • 1 cup (100g) panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 tbsp (57g) unsalted butter, softened
  • 1 tbsp fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Zest of 1 lemon

Instructions:

  1. In a mixing bowl, combine softened butter, parsley, garlic, lemon juice, and lemon zest. Mix until smooth and well combined. Set aside to allow flavors to meld.
  2. Season the flounder fillets with salt and pepper on both sides. Set up a dredging station: Place flour in one shallow dish, beaten egg in another, and combine panko, garlic powder, paprika, salt, and pepper in a third dish.
  3. Dredge each fillet in flour, shaking off excess. Dip in egg, allowing excess to drip off. Coat each fillet in the seasoned panko mixture, pressing gently to adhere.
  4. Preheat the air fryer to 400°F (200°C). Place coated fillets in the air fryer basket in a single layer (you may need to do this in batches). Cook for 12-15 minutes or until crispy and golden brown, flipping halfway through cooking.
  5. Remove the flounder from the air fryer and drizzle with the lemon herb butter. Serve immediately for the best texture and flavor.
