Ingredients:
- 2 fillets of flounder (approximately 6 ounces each, 170 grams)
- 1/2 cup (60g) all-purpose flour
- 1 large egg
- 1 cup (100g) panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 4 tbsp (57g) unsalted butter, softened
- 1 tbsp fresh parsley, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Zest of 1 lemon
Instructions:
- In a mixing bowl, combine softened butter, parsley, garlic, lemon juice, and lemon zest. Mix until smooth and well combined. Set aside to allow flavors to meld.
- Season the flounder fillets with salt and pepper on both sides. Set up a dredging station: Place flour in one shallow dish, beaten egg in another, and combine panko, garlic powder, paprika, salt, and pepper in a third dish.
- Dredge each fillet in flour, shaking off excess. Dip in egg, allowing excess to drip off. Coat each fillet in the seasoned panko mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C). Place coated fillets in the air fryer basket in a single layer (you may need to do this in batches). Cook for 12-15 minutes or until crispy and golden brown, flipping halfway through cooking.
- Remove the flounder from the air fryer and drizzle with the lemon herb butter. Serve immediately for the best texture and flavor.
