Ingredients:
- 4 catfish fillets (6 ounces each; about 170g)
- 1 cup (100g) cornmeal
- 1/2 cup (60g) all-purpose flour
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
- 2 large eggs
- 2 tablespoons (30ml) milk
- Cooking spray or vegetable oil for greasing
- Lemon wedges (for serving)
- Fresh parsley or cilantro, chopped (for serving)
Instructions:
- Preheat the oven to 400°F (200°C).
- In one shallow dish, combine cornmeal, flour, spices, salt, and black pepper. Mix well.
- In another shallow dish, whisk together eggs and milk until smooth.
- Dip each catfish fillet into the egg mixture, letting excess drip off, then coat thoroughly in the cornmeal mixture.
- Line a baking sheet with parchment paper (if using) and lightly grease it. Place the coated fillets on the sheet and spray lightly with cooking spray.
- Bake for 20-25 minutes, or until the fillets are golden and the internal temperature reaches 145°F (63°C).
- Garnish with lemon wedges and fresh herbs, if desired. Enjoy!
