Ingredients:
- 1 ½ pounds ground chicken
- 1 cup breadcrumbs
- 1 large egg, beaten
- ½ cup milk
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- Salt and pepper to taste
- 6 slices of cooked ham
- 1 cup Swiss cheese, shredded
- ½ teaspoon Dijon mustard (optional)
- ½ cup breadcrumbs for topping
- 2 tablespoons unsalted butter, melted
- ¼ cup freshly grated Parmesan cheese
Instructions:
- Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
- In a large mixing bowl, combine ground chicken, breadcrumbs, beaten egg, milk, minced garlic, oregano, onion powder, salt, and pepper. Mix until just combined.
- Lay out half of the meatloaf mixture in the prepared pan, pressing it evenly to form a base. Top with ham, Swiss cheese, and a smear of Dijon mustard. Gently spread the remaining meat mixture over the top, sealing the edges.
- In a small bowl, mix breadcrumbs, melted butter, and Parmesan cheese. Sprinkle the topping evenly over the meatloaf.
- Place the loaf pan on a baking sheet in the oven. Bake for 50–55 minutes, or until the internal temperature reaches 165°F (74°C) or until juices run clear.
- Remove from the oven and let it rest for 10 minutes before slicing. Serve warm.
