Ingredients:

  • 1 ½ pounds ground chicken
  • 1 cup breadcrumbs
  • 1 large egg, beaten
  • ½ cup milk
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6 slices of cooked ham
  • 1 cup Swiss cheese, shredded
  • ½ teaspoon Dijon mustard (optional)
  • ½ cup breadcrumbs for topping
  • 2 tablespoons unsalted butter, melted
  • ¼ cup freshly grated Parmesan cheese

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, beaten egg, milk, minced garlic, oregano, onion powder, salt, and pepper. Mix until just combined.
  3. Lay out half of the meatloaf mixture in the prepared pan, pressing it evenly to form a base. Top with ham, Swiss cheese, and a smear of Dijon mustard. Gently spread the remaining meat mixture over the top, sealing the edges.
  4. In a small bowl, mix breadcrumbs, melted butter, and Parmesan cheese. Sprinkle the topping evenly over the meatloaf.
  5. Place the loaf pan on a baking sheet in the oven. Bake for 50–55 minutes, or until the internal temperature reaches 165°F (74°C) or until juices run clear.
  6. Remove from the oven and let it rest for 10 minutes before slicing. Serve warm.
