Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (100g) almond flour
  • 1/2 cup (100g) granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1 large egg, beaten
  • 1 teaspoon almond extract
  • 1/4 cup (40g) whole almonds, for decoration

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the all-purpose flour, almond flour, baking soda, and salt.
  3. In another bowl, beat the softened butter and sugar until light and fluffy.
  4. Mix in the beaten egg and almond extract into the butter mixture until well combined.
  5. Gradually fold the dry ingredients into the wet mixture until the dough comes together.
  6. Cover and chill the dough in the refrigerator for 30 minutes.
  7. Roll out the dough on a floured surface and cut into desired shapes or simply form into balls.
  8. Place shaped cookies on a lined baking sheet, and press a whole almond into the center of each cookie.
  9. Bake for 12-15 minutes, or until the edges are golden brown.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
