Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (100g) almond flour
- 1/2 cup (100g) granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 1 large egg, beaten
- 1 teaspoon almond extract
- 1/4 cup (40g) whole almonds, for decoration
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the all-purpose flour, almond flour, baking soda, and salt.
- In another bowl, beat the softened butter and sugar until light and fluffy.
- Mix in the beaten egg and almond extract into the butter mixture until well combined.
- Gradually fold the dry ingredients into the wet mixture until the dough comes together.
- Cover and chill the dough in the refrigerator for 30 minutes.
- Roll out the dough on a floured surface and cut into desired shapes or simply form into balls.
- Place shaped cookies on a lined baking sheet, and press a whole almond into the center of each cookie.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
