Ingredients:
- 2 lbs chicken wing mid-joints and flats, patted dry
- 1 tbsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup fresh mango, cubed
- 10g habanero peppers, seeded and minced
- 2 tbsp honey
- 1 tbsp fresh lime juice
- 1 clove garlic, minced
- 1/4 tsp salt
Instructions:
- Preheat your air fryer to 400°F (200°C) or your oven to 425°F (218°C).
- In a dry bowl, toss the chicken wings with baking powder, garlic powder, paprika, salt, and pepper until evenly coated.
- Arrange wings in a single layer in the air fryer basket or on an oven wire rack, ensuring they are not crowded.
- Cook the wings for 20-25 minutes, flipping halfway through, until the skin is mahogany-colored and crispy. Let them rest for 2 minutes.
- While wings cook, place mango, habanero, honey, lime juice, garlic, and salt into a blender and process until smooth.
- Pour the blended mixture into a saucepan over medium heat. Simmer for 5-8 minutes, stirring frequently, until the sauce reduces by about 20% and becomes a thick, glossy glaze.
- Place the hot, crispy wings into a large bowl, pour the warm mango habanero sauce over them, and toss rapidly to coat.
