- 14 oz extra-firm tofu, drained
- 2 tbsp avocado oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tbsp cornstarch
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tsp sriracha
- 1 tsp toasted sesame oil
- 1 clove garlic, minced
- 1/2 tsp fresh ginger, grated
Instructions:
- Tear the tofu block into bite-sized, irregular chunks to increase surface area for crispiness.
- Pat each tofu piece firmly with paper towels to remove excess moisture.
- In a bowl, toss the dried tofu pieces with salt, pepper, and cornstarch until lightly coated.
- Heat avocado oil in a 12-inch non-stick skillet or cast-iron pan over medium-high heat until shimmering.
- Place tofu pieces in the pan in a single layer, ensuring they are not overcrowded.
- Fry undisturbed for 3-4 minutes per side until a deep golden-brown, mahogany crust develops.
- While tofu fries, whisk together soy sauce, maple syrup, sriracha, toasted sesame oil, minced garlic, and grated ginger in a small bowl.
- Reduce heat to medium, pour the glaze over the tofu, and toss quickly to coat before removing from heat.
