Ingredients:

  • 14 oz extra-firm tofu, drained
  • 2 tbsp avocado oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp sriracha
  • 1 tsp toasted sesame oil
  • 1 clove garlic, minced
  • 1/2 tsp fresh ginger, grated

Instructions:

  1. Tear the tofu block into bite-sized, irregular chunks to increase surface area for crispiness.
  2. Pat each tofu piece firmly with paper towels to remove excess moisture.
  3. In a bowl, toss the dried tofu pieces with salt, pepper, and cornstarch until lightly coated.
  4. Heat avocado oil in a 12-inch non-stick skillet or cast-iron pan over medium-high heat until shimmering.
  5. Place tofu pieces in the pan in a single layer, ensuring they are not overcrowded.
  6. Fry undisturbed for 3-4 minutes per side until a deep golden-brown, mahogany crust develops.
  7. While tofu fries, whisk together soy sauce, maple syrup, sriracha, toasted sesame oil, minced garlic, and grated ginger in a small bowl.
  8. Reduce heat to medium, pour the glaze over the tofu, and toss quickly to coat before removing from heat.
