Ingredients:

  • 1 block (14 oz / 400g) extra-firm tofu, drained
  • 1 tbsp (15ml) olive oil
  • 1/2 tsp (3g) salt
  • 2 tbsp (16g) cornstarch
  • 1/2 tsp (2g) garlic powder
  • 1/2 tsp (2g) smoked paprika
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Break the tofu block into irregular, bite-sized chunks using your fingers to create jagged edges. Toss the chunks in a bowl with olive oil and salt until evenly coated.
  2. Sift cornstarch, garlic powder, smoked paprika, and black pepper over the tofu. Toss gently until a light, matte coating is achieved.
  3. For Air Fryer: Arrange in a single layer and cook at 400°F (200°C) for 15-20 minutes, shaking halfway through. For Oven: Spread on a parchment-lined sheet and bake at 375°F (190°C) for 35-40 minutes, flipping once at the 20-minute mark.
  4. Remove when edges are mahogany-colored and firm. Let rest for 2 minutes to allow the crust to set.
