Ingredients:
- 1.5 lbs (680g) beef sirloin or round steak, cut into 1/2-inch strips
- 1 tbsp (15 ml) olive oil
- 1 tsp salt (5g)
- 1/2 tsp black pepper (2.5g)
- 1 large onion, sliced
- 1 green bell pepper, cored, seeded, and sliced
- 1 red bell pepper, cored, seeded, and sliced
- 1 yellow bell pepper, cored, seeded, and sliced
- 2 cloves garlic, minced
- 1 cup (240 ml) beef broth (low sodium preferred)
- 1/2 cup (120 ml) soy sauce (low sodium preferred)
- 1/4 cup (60 ml) Worcestershire sauce
- 2 tbsp (30 ml) tomato paste
- 1 tbsp (15 ml) cornstarch
- 2 tbsp (30 ml) cold water
- 1 tbsp (15 ml) brown sugar
- 1 tsp ginger, minced
- 1/2 tsp sesame oil
- Chopped green onions (optional)
- Sesame seeds (optional)
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Season beef strips with salt and pepper. Sear the beef in batches until browned on all sides.
- Slice the onion and bell peppers. Mince the garlic and ginger.
- Place the sliced onions in the bottom of the slow cooker. Top with the seared beef and bell peppers.
- In a mixing bowl, whisk together beef broth, soy sauce, Worcestershire sauce, tomato paste, brown sugar, ginger, and sesame oil.
- In a small bowl, whisk together cornstarch and cold water until smooth.
- Pour the sauce over the beef and vegetables in the slow cooker. Stir in the cornstarch slurry.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is tender and the vegetables are soft.
- Garnish with chopped green onions and sesame seeds (optional). Serve over rice, noodles, or mashed potatoes.
