Ingredients:

  • 1.5 lbs (680g) beef sirloin or round steak, cut into 1/2-inch strips
  • 1 tbsp (15 ml) olive oil
  • 1 tsp salt (5g)
  • 1/2 tsp black pepper (2.5g)
  • 1 large onion, sliced
  • 1 green bell pepper, cored, seeded, and sliced
  • 1 red bell pepper, cored, seeded, and sliced
  • 1 yellow bell pepper, cored, seeded, and sliced
  • 2 cloves garlic, minced
  • 1 cup (240 ml) beef broth (low sodium preferred)
  • 1/2 cup (120 ml) soy sauce (low sodium preferred)
  • 1/4 cup (60 ml) Worcestershire sauce
  • 2 tbsp (30 ml) tomato paste
  • 1 tbsp (15 ml) cornstarch
  • 2 tbsp (30 ml) cold water
  • 1 tbsp (15 ml) brown sugar
  • 1 tsp ginger, minced
  • 1/2 tsp sesame oil
  • Chopped green onions (optional)
  • Sesame seeds (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season beef strips with salt and pepper. Sear the beef in batches until browned on all sides.
  2. Slice the onion and bell peppers. Mince the garlic and ginger.
  3. Place the sliced onions in the bottom of the slow cooker. Top with the seared beef and bell peppers.
  4. In a mixing bowl, whisk together beef broth, soy sauce, Worcestershire sauce, tomato paste, brown sugar, ginger, and sesame oil.
  5. In a small bowl, whisk together cornstarch and cold water until smooth.
  6. Pour the sauce over the beef and vegetables in the slow cooker. Stir in the cornstarch slurry.
  7. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is tender and the vegetables are soft.
  8. Garnish with chopped green onions and sesame seeds (optional). Serve over rice, noodles, or mashed potatoes.
