Ingredients:
- 4 cups all-purpose flour (480g)
- 2 tablespoons unsweetened cocoa powder (15g)
- 1 tablespoon instant yeast (10g)
- 1 tablespoon granulated sugar (13g)
- 1 teaspoon salt (5g)
- 1 cup warm water (240ml)
- 1/4 cup brewed coffee (60ml), cooled
- Coarse sea salt (to taste)
- Optional: sliced chives or sesame seeds for garnish
Instructions:
- In a large mixing bowl, combine flour, cocoa powder, yeast, sugar, and salt.
- Add warm water and brewed coffee; mix until a rough dough forms.
- Turn the dough onto a floured surface; knead for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let it rise for 1 hour or until doubled in size.
- Punch down the dough, divide into 8 equal pieces, and shape each into a ball. Poke a hole in the center and stretch it to form bagels.
- Bring a large pot of water to a boil. Carefully add the bagels, boiling for 1-2 minutes on each side.
- Preheat the oven to 425°F (220°C). Place boiled bagels on a parchment-lined baking sheet. Sprinkle with coarse sea salt and additional toppings if desired.
- Bake for 15-20 minutes or until golden brown and firm to the touch.
- Allow bagels to cool on a rack before slicing. Enjoy plain or with your favorite spread.
