Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions:
- In a mixing bowl, combine peanut butter, powdered sugar, softened butter, and vanilla extract. Mix until smooth and well-combined.
- Using a cookie scoop or your hands, scoop out mixture and roll into 1-inch balls. Place on a parchment-lined baking sheet.
- Refrigerate the peanut butter balls for about 30 minutes, until firm.
- In a microwave-safe bowl or double boiler, melt chocolate chips with vegetable oil until smooth.
- Use a toothpick to dip each ball into the melted chocolate, leaving a small portion of the peanut butter exposed at the top. Place back onto the parchment-lined sheet.
- Allow chocolate to set in the fridge for about 15 minutes before serving.
