Ingredients:

  • 1 cup tapioca starch (125g)
  • 1/3 cup water (80ml)
  • 1/4 cup brown sugar (50g)
  • 4 bags of black tea (or your choice of tea)
  • 4 cups water (960ml)
  • 1/2 cup sugar (100g)
  • 1 cup milk (240ml)
  • Ice cubes

Instructions:

  1. Bring water and brown sugar to a boil in a medium saucepan.
  2. Stir in tapioca starch until it forms a dough.
  3. Knead the dough until smooth, then shape into small pearls about 1/4 inch in diameter.
  4. Boil a large pot of water.
  5. Add the shaped pearls to the boiling water and cook for about 25 minutes.
  6. Remove from heat and let sit for 10 minutes.
  7. In a separate saucepan, heat 4 cups of water to near boiling.
  8. Add tea bags and steep for 5 minutes.
  9. Remove tea bags and stir in sugar until dissolved. Let cool.
  10. Rinse boba pearls under cold water and drain.
  11. In a glass, layer boba pearls, chilled tea, milk, and ice cubes.
  12. Stir to combine and enjoy with a wide straw!
