Ingredients:
- 1 cup tapioca starch (125g)
- 1/3 cup water (80ml)
- 1/4 cup brown sugar (50g)
- 4 bags of black tea (or your choice of tea)
- 4 cups water (960ml)
- 1/2 cup sugar (100g)
- 1 cup milk (240ml)
- Ice cubes
Instructions:
- Bring water and brown sugar to a boil in a medium saucepan.
- Stir in tapioca starch until it forms a dough.
- Knead the dough until smooth, then shape into small pearls about 1/4 inch in diameter.
- Boil a large pot of water.
- Add the shaped pearls to the boiling water and cook for about 25 minutes.
- Remove from heat and let sit for 10 minutes.
- In a separate saucepan, heat 4 cups of water to near boiling.
- Add tea bags and steep for 5 minutes.
- Remove tea bags and stir in sugar until dissolved. Let cool.
- Rinse boba pearls under cold water and drain.
- In a glass, layer boba pearls, chilled tea, milk, and ice cubes.
- Stir to combine and enjoy with a wide straw!
