Ingredients:

  • 3 ripe bananas (about 1 ½ cups mashed or 360g)
  • ½ cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup (75g) chopped walnuts or pecans (optional)
  • ½ cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan, or line it with parchment paper for easy removal.
  3. In a bowl, mash the ripe bananas until smooth.
  4. Stir in melted butter, sugar, eggs, and vanilla until well combined.
  5. In another bowl, whisk together baking soda, salt, flour, and cinnamon (if using).
  6. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  7. Gently fold in nuts or chocolate chips, if desired.
  8. Transfer the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
