Ingredients:
- 3 ripe bananas (about 1 ½ cups mashed or 360g)
- ½ cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 ½ cups (190g) all-purpose flour
- ½ teaspoon ground cinnamon (optional)
- ½ cup (75g) chopped walnuts or pecans (optional)
- ½ cup (90g) chocolate chips (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the loaf pan, or line it with parchment paper for easy removal.
- In a bowl, mash the ripe bananas until smooth.
- Stir in melted butter, sugar, eggs, and vanilla until well combined.
- In another bowl, whisk together baking soda, salt, flour, and cinnamon (if using).
- Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Gently fold in nuts or chocolate chips, if desired.
- Transfer the batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
