Ingredients:
- 115g unsalted butter, melted and slightly cooled
- 150g packed light brown sugar
- 100g granulated white sugar
- 1 large egg, room temperature
- 5ml vanilla extract
- 95g unsweetened cocoa powder, sifted
- 155g all-purpose flour
- 3g baking soda
- 1.5g salt
- 170g semi-sweet chocolate chips
- 85g dark chocolate chunks
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk the melted butter with brown and white sugars until the mixture looks like wet sand and no large sugar clumps remain.
- Whisk in the egg and vanilla extract vigorously until the batter becomes glossy and smooth.
- Sift in the cocoa powder, flour, baking soda, and salt.
- Use a rubber spatula to fold the dry ingredients into the wet batter until the last streak of flour disappears.
- Fold in the semi-sweet chocolate chips and dark chocolate chunks until evenly distributed.
- Using a cookie scoop, drop rounded mounds of dough 2 inches apart onto the prepared sheets, pressing 3-4 extra chocolate chips into the top of each.
- Bake for 9 to 11 minutes; remove when edges are set and matte, but centers still look slightly underbaked and soft.
