Ingredients:

  • 115g unsalted butter, melted and slightly cooled
  • 150g packed light brown sugar
  • 100g granulated white sugar
  • 1 large egg, room temperature
  • 5ml vanilla extract
  • 95g unsweetened cocoa powder, sifted
  • 155g all-purpose flour
  • 3g baking soda
  • 1.5g salt
  • 170g semi-sweet chocolate chips
  • 85g dark chocolate chunks

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk the melted butter with brown and white sugars until the mixture looks like wet sand and no large sugar clumps remain.
  3. Whisk in the egg and vanilla extract vigorously until the batter becomes glossy and smooth.
  4. Sift in the cocoa powder, flour, baking soda, and salt.
  5. Use a rubber spatula to fold the dry ingredients into the wet batter until the last streak of flour disappears.
  6. Fold in the semi-sweet chocolate chips and dark chocolate chunks until evenly distributed.
  7. Using a cookie scoop, drop rounded mounds of dough 2 inches apart onto the prepared sheets, pressing 3-4 extra chocolate chips into the top of each.
  8. Bake for 9 to 11 minutes; remove when edges are set and matte, but centers still look slightly underbaked and soft.
