Ingredients:

  • 1 Box Yellow Cake Mix (15.25 oz)
  • 1 Cup 100% Pumpkin Puree
  • 1 large Egg
  • 1 Cup Cinnamon Chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, combine the cake mix, 100% pumpkin puree, and the large egg. Mix using an electric mixer or wooden spoon until a thick, uniform dough forms. Do not overmix.
  3. Fold in the 1 cup of cinnamon chips until evenly distributed throughout the dough.
  4. Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake for 9 to 11 minutes, or until the edges are set and the centers look slightly soft and puffy. These cookies should not brown significantly.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
