Ingredients:

  • 1/2 cup (115g) Unsalted Butter
  • 1.5 cups (360ml) Heavy Whipping Cream
  • 2 oz (56g) Full-Fat Cream Cheese, softened
  • 1.5 cups (150g) Freshly grated Parmesan cheese
  • 3 cloves Garlic, minced
  • 1/2 tsp (3g) Sea salt
  • 1/4 tsp (1g) Freshly cracked black pepper
  • 1/8 tsp (0.5g) Ground nutmeg

Instructions:

  1. In a large deep skillet over medium heat, melt the butter until it begins to foam. Add the minced garlic and sauté for about 60 seconds until fragrant and translucent, ensuring it does not brown.
  2. Pour in the heavy whipping cream and whisk in the softened cream cheese. Bring the mixture to a gentle simmer for 3–5 minutes, whisking occasionally until the sauce begins to coat the back of a spoon.
  3. Reduce heat to low. Gradually whisk in the freshly grated Parmesan cheese, stirring constantly until the cheese is completely melted and the sauce is smooth and emulsified.
  4. Whisk in the sea salt, black pepper, and ground nutmeg. Remove from heat and serve immediately over pasta.
