Ingredients:

  • 1 lb extra-firm tofu
  • 2 tbsp water
  • 1/4 cup soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 tbsp toasted sesame oil

Instructions:

  1. Wrap the tofu block in a clean kitchen towel or paper towels and place a heavy object, such as a cast iron skillet, on top for 15–30 minutes to remove excess water.
  2. Use your hands to break the pressed tofu into irregular, bite-sized chunks to increase surface area for the marinade.
  3. In a medium bowl or jar, whisk together the soy sauce, apple cider vinegar, maple syrup, garlic powder, and cayenne pepper.
  4. Stir in the toasted sesame oil until well-distributed.
  5. Place the tofu chunks into an airtight glass container or Ziploc bag and pour the marinade over the top, ensuring the tofu is fully submerged.
  6. Seal the container and refrigerate for at least 30 minutes, or overnight for maximum flavor.
  7. Optional: Sear the tofu in a non-stick pan with 2 tbsp of water for 10 minutes until edges are caramelized.
