Ingredients:
- 1 dozen fresh oysters, shucked (approximately 1.5 lbs/680 g)
- 12 plain water crackers or buttery crackers (approximately 4 oz/113 g)
- 1/4 cup sour cream (60 ml)
- 1 tablespoon mayonnaise (15 ml)
- 1 teaspoon Worcestershire sauce (5 ml)
- 1 teaspoon hot sauce (5 ml)
- Zest and juice of 1 lemon
- Fresh chopped chives or green onions for garnish (optional)
Instructions:
- If using live oysters, shuck them carefully using a shucking knife and place each oyster on its half shell, ensuring they remain upright to retain juices.
- In a mixing bowl, combine sour cream, mayonnaise, Worcestershire sauce, hot sauce, lemon zest, and lemon juice. Whisk until smooth and well blended.
- Place a dollop of the sauce on each oyster and garnish with fresh chives or green onions if desired.
- Arrange the crackers on a serving platter and place the oysters on the crackers or serve them alongside for guests to assemble.
