Ingredients:

  • 4 cups fresh peaches, peeled and sliced (about 6 medium peaches or 900g)
  • 1/2 cup granulated sugar (100g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour (120g)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (50g)
  • 1/4 cup unsalted butter, melted (60g)
  • 1/2 cup whole milk (120ml)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, sugar, vanilla extract, cinnamon, and lemon juice. Let sit for 5 minutes to release juices.
  3. In another bowl, whisk together flour, baking powder, salt, and sugar. Stir in melted butter and milk until just combined.
  4. Pour the peach mixture into the baking dish. Dollop the topping evenly over the peaches.
  5. Bake in the preheated oven for 30 minutes or until the topping is golden brown and a toothpick inserted comes out clean.
  6. Allow the cobbler to cool for 10 minutes before serving.
