Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1/2 cup (50g) unsweetened cocoa powder, sifted
  • 1/4 cup (60ml) milk (whole or 2%), or heavy cream
  • 1 teaspoon (5ml) pure vanilla extract
  • Pinch of salt

Instructions:

  1. In a large mixing bowl, cream the softened butter with an electric mixer until light and fluffy. This usually takes about 2-3 minutes.
  2. In a separate bowl, whisk together the sifted powdered sugar, cocoa powder, and salt. Sifting is crucial to avoid lumps.
  3. Gradually add the dry ingredients to the creamed butter, alternating with the milk (or cream). Begin and end with the dry ingredients. Mix on low speed until just combined.
  4. Stir in the vanilla extract.
  5. Increase the mixer speed to medium-high and whip for 2-3 minutes, or until the frosting is light, fluffy, and smooth. Don't overmix!
  6. Use immediately to frost your favourite cakes and cupcakes.
