Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1/2 cup (50g) unsweetened cocoa powder, sifted
- 1/4 cup (60ml) milk (whole or 2%), or heavy cream
- 1 teaspoon (5ml) pure vanilla extract
- Pinch of salt
Instructions:
- In a large mixing bowl, cream the softened butter with an electric mixer until light and fluffy. This usually takes about 2-3 minutes.
- In a separate bowl, whisk together the sifted powdered sugar, cocoa powder, and salt. Sifting is crucial to avoid lumps.
- Gradually add the dry ingredients to the creamed butter, alternating with the milk (or cream). Begin and end with the dry ingredients. Mix on low speed until just combined.
- Stir in the vanilla extract.
- Increase the mixer speed to medium-high and whip for 2-3 minutes, or until the frosting is light, fluffy, and smooth. Don't overmix!
- Use immediately to frost your favourite cakes and cupcakes.
