Ingredients:
- 1 box (15.25 oz / 430 g) pistachio cake mix
- 1 cup (240 ml) water
- 1/2 cup (120 ml) vegetable oil
- 3 large eggs
- 1/2 cup (115 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar
- 1/4 cup (60 ml) heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup (75 g) finely chopped pistachios (for garnish)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Whisk until fully combined and smooth, about 2-3 minutes.
- Pour the batter into a greased 9x13 inch baking pan.
- Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
- While the cake is cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, followed by heavy cream and vanilla extract. Beat until fluffy and smooth.
- Once the cake is completely cooled, frost the top with the pistachio frosting.
- Garnish with chopped pistachios before slicing and serving.
