Ingredients:

  • 1 box (15.25 oz / 430 g) pistachio cake mix
  • 1 cup (240 ml) water
  • 1/2 cup (120 ml) vegetable oil
  • 3 large eggs
  • 1/2 cup (115 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar
  • 1/4 cup (60 ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup (75 g) finely chopped pistachios (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Whisk until fully combined and smooth, about 2-3 minutes.
  3. Pour the batter into a greased 9x13 inch baking pan.
  4. Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  6. While the cake is cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, followed by heavy cream and vanilla extract. Beat until fluffy and smooth.
  7. Once the cake is completely cooled, frost the top with the pistachio frosting.
  8. Garnish with chopped pistachios before slicing and serving.
