Ingredients:

  • 4 large red snapper fillets (approx. 6 oz / 170g each), skin-on
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 4 tbsp unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley, finely chopped
  • 0.5 tsp red pepper flakes

Instructions:

  1. Pat the red snapper fillets bone-dry with paper towels to ensure a golden-brown crust and prevent sticking.
  2. Rub both sides of the fillets with olive oil, sea salt, black pepper, and smoked paprika.
  3. Choose a cooking method: Bake at 400°F (200°C) for 12–15 minutes, Grill over medium-high heat for 8-9 minutes total, or Air Fry at 375°F (190°C) for 8–10 minutes.
  4. Whisk together the melted butter, minced garlic, lemon juice, lemon zest, and fresh parsley to create the signature sauce.
  5. Let the fish rest for 2 minutes after cooking. Pour the garlic butter sauce over the fillets and garnish with red pepper flakes and extra lemon wedges.
