Ingredients:

  • 2 large ripe mangoes, peeled and diced (approx. 500g)
  • 10 oz fresh strawberries, hulled and diced (approx. 300g)
  • 1/4 cup finely minced red onion
  • 1 small jalapeño pepper, seeded and finely minced
  • 1/2 cup coarsely chopped fresh coriander (cilantro)
  • 2 Tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 tsp honey or maple syrup (optional)
  • 1/2 tsp sea salt, or to taste
  • 1/4 tsp freshly ground black pepper

Instructions:

  1. Tame the Onion: Place the finely minced red onion in a small sieve and run cold water over it for 30 seconds. Shake off excess water. This step softens the raw flavour and is crucial for optimal results.
  2. Prep the Dressing: In a medium-sized mixing bowl, combine the fresh lime juice, lime zest, salt, pepper, and optional honey or syrup. Whisk until the salt dissolves.
  3. Combine Aromatic Ingredients: Add the drained red onion, minced jalapeño, and chopped coriander to the bowl with the lime dressing. Stir gently to coat.
  4. Dice the Fruit: Peel and dice the mangoes and hull and dice the strawberries. Aim for uniform pieces (about 8–10 mm cubes) so the textures are consistent in every bite.
  5. Fold in Fruit: Add the diced mango and strawberries to the bowl. Use a rubber spatula to gently fold the ingredients together, ensuring all the fruit is coated in the dressing without crushing the delicate strawberries.
  6. Rest the Salsa: Cover the bowl tightly with cling film and refrigerate for a minimum of 25 minutes. This chilling time allows the flavors to properly marry.
  7. Final Adjustments: Just before serving, taste the salsa and adjust the seasoning: add a pinch more salt to enhance the sweetness or a squeeze more lime if it needs a lift.
  8. Serve immediately, ensuring the salsa remains chilled until the last moment.
