  • 1 pound ground pork (or chicken/turkey)
  • 2 cups coleslaw mix (cabbage and carrots)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Sriracha or sweet chili sauce (optional)
  • Sesame seeds (optional)
  • More green onions, sliced (optional)

Instructions:

  1. Preheat a large skillet or wok over medium-high heat.
  2. Add the ground pork, breaking it apart with a spatula, and cook until browned. Season with salt and pepper.
  3. Mix in the minced garlic and ground ginger. Cook for another minute until fragrant.
  4. Add the coleslaw mix and green onions. Stir-fry until the cabbage is tender, about 3-4 minutes.
  5. Drizzle in the sesame oil, soy sauce, and rice vinegar. Stir well to combine and heat through.
  6. Check flavors; adjust seasoning as necessary.
  7. Transfer to serving bowls and garnish as desired.
