- 1 pound ground pork (or chicken/turkey)
- 2 cups coleslaw mix (cabbage and carrots)
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon sesame oil

- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Sriracha or sweet chili sauce (optional)

Instructions:
- Preheat a large skillet or wok over medium-high heat.
- Add the ground pork, breaking it apart with a spatula, and cook until browned. Season with salt and pepper.
- Mix in the minced garlic and ground ginger. Cook for another minute until fragrant.
- Add the coleslaw mix and green onions. Stir-fry until the cabbage is tender, about 3-4 minutes.
- Drizzle in the sesame oil, soy sauce, and rice vinegar. Stir well to combine and heat through.
- Check flavors; adjust seasoning as necessary.
- Transfer to serving bowls and garnish as desired.
