Ingredients:

  • 2 cups fresh elderberries (about 300 grams)
  • 1 cup granulated sugar (200 grams)
  • 1/4 cup freshly squeezed lemon juice (60 ml)
  • 1/4 cup water (60 ml)
  • 1/4 teaspoon salt

Instructions:

  1. Remove the elderberries from stems and rinse under cold water.
  2. In a saucepan, combine elderberries, water, and salt. Cook over medium heat for 10 minutes until the berries start to burst.
  3. Stir in the sugar and lemon juice. Bring the mixture to a rolling boil for 10 minutes, stirring frequently.
  4. Allow it to bubble until it thickens slightly; check using a spoon; it should coat the back.
  5. Remove from heat and let cool slightly. Pour the jam into sterilized jars, then cool to room temperature before sealing.
