Ingredients:

  • 2 medium (approx. 300g) sweet potatoes or Yukon gold potatoes, scrubbed and diced into ½-inch (1.25 cm) cubes
  • 1 tbsp (15ml) olive oil
  • ¼ tsp (1g) smoked paprika
  • ¼ tsp (1g) black pepper, freshly ground
  • ⅛ tsp (0.5g) sea salt
  • 4 large eggs (2 per bowl)
  • ½ tbsp (7.5ml) olive oil or butter for cooking eggs
  • Optional: ½ cup (75g) cooked, crumbled turkey sausage or pre-cooked chicken breast, diced
  • 2 cups (60g) fresh spinach or chopped kale
  • ½ medium (75g) avocado, thinly sliced
  • ¼ cup (30g) cherry tomatoes, halved
  • 1 tbsp (15ml) fresh cilantro, chopped (optional)
  • Hot sauce or sriracha, to taste
  • Everything Bagel Seasoning, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Dice the sweet potatoes or Yukon gold potatoes into ½-inch (1.25 cm) cubes. In a bowl, toss the diced potatoes with 1 tbsp (15ml) olive oil, ¼ tsp (1g) smoked paprika, ¼ tsp (1g) black pepper, and ⅛ tsp (0.5g) sea salt until evenly coated. Spread the seasoned potatoes in a single layer on a large baking sheet. Roast for 20 minutes, or until tender and lightly browned, flipping halfway through.
  2. While the potatoes are roasting, heat ½ tbsp (7.5ml) olive oil or butter in a non-stick pan over medium heat. Cook the 4 large eggs to your desired doneness (e.g., fried, scrambled, or poached). If using, warm or crumble the ½ cup (75g) cooked turkey sausage or pre-cooked chicken breast.
  3. Halve the ¼ cup (30g) cherry tomatoes and thinly slice the ½ medium (75g) avocado. If using, chop 1 tbsp (15ml) fresh cilantro.
  4. Divide the roasted potatoes between two serving bowls. Top each bowl with 2 eggs, the 2 cups (60g) fresh spinach or chopped kale, the sliced avocado, and the halved cherry tomatoes. If using, add the warmed turkey sausage or chicken.
  5. Garnish each bowl with chopped fresh cilantro (if desired), a dash of hot sauce or sriracha to taste, and a sprinkle of Everything Bagel Seasoning to taste. Serve immediately and enjoy your power-packed breakfast!
