Ingredients:
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/3 cup brown sugar, packed
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
- 1/2 cup corn kernels (optional)
- Melted butter for brushing on top (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, whisk together the flour, cornmeal, brown sugar, baking powder, and salt until well combined.
- In another bowl, whisk together the buttermilk, vegetable oil, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix. If using, fold in corn kernels.
- Pour the batter into the greased baking dish and spread it evenly.
- Bake in the preheated oven for 20–25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let the cornbread cool slightly before brushing with melted butter, cutting into squares, and serving warm.
