Ingredients:
- 7 oz Aged English Cheddar (sharp)
- 7 oz Soft White Cheese (Brie or Camembert) wheel
- 5 oz Blue Cheese (Stilton or Gorgonzola) wedge
- 4 oz Prosciutto di Parma (thinly sliced)
- 6 oz Salami or Coppa (cured/pre-sliced)
- 5 oz Duck or Chicken Liver Pâté
- 1 bunch Red Grapes (on the vine)
- 1/2 cup Fresh Cranberries (for garnish)
- 1/2 cup combined Dried Figs and Apricots
- 2 oz Honeycomb or 1/4 cup Local Honey
- 1 package Water Biscuits or Artisan Crackers
- Half a baguette slices (toasted or fresh)
- 1/2 cup Candied Pecans or Walnuts
- 4 tbsp Fig Jam or Cranberry Chutney
- 1/4 cup Cornichons (small pickled gherkins)
- 6–8 sprigs Fresh Rosemary
- 1/2 cup Olives (mixed variety)
Instructions:
- Slice and Prep: Cut the hard cheeses (Cheddar) into manageable shapes (cubes or triangles). Wash and thoroughly dry all grapes, cranberries, and herbs.
- Chill and Rest: Keep the meats and cheeses refrigerated until 20 minutes before assembly. Allow the cheeses to rest at room temperature for 15 minutes before serving for optimal flavor.
- Transfer Spreads: Decant the pâté, fig jam, and olives into the small ceramic ramekins or dipping bowls.
- Place the Bowls: Begin by placing the anchor items—the small ramekins of spreads (pâté, jam, olives)—on the board first. These are difficult to tuck in later.
- Position the Cheeses: Distribute the cheeses evenly around the board, ensuring they are separated. Place the whole Brie wheel next to the honeycomb/honey bowl. Place the cubed Cheddar and Blue cheese in opposite corners.
- Create Meat Clusters: Artfully arrange the cured meats near the cheese. For a professional look, fold the Prosciutto into ribbons or loosely roll slices to resemble roses. Shingle the salami slices in wavy lines.
- Add Crackers and Bread: Place the largest cracker piles or the stack of toasted baguette slices along the edges of the board. Reserve some for replenishment.
- Scatter the Fruit: Place the grape clusters directly on the board, curling them into empty spaces. Layer dried figs and apricots between the cheese clusters.
- Fill the Voids: Use the candied nuts, cornichons, and extra olives to fill any remaining small gaps. The goal is to avoid showing the wooden board underneath—maximum density looks luxurious.
- The Festive Flourish: Distribute the fresh cranberries and tuck the rosemary sprigs into the gaps, making them stand upright to mimic tiny Christmas trees. Drizzle the honey over the Brie or the blue cheese just before serving.
