Ingredients:
- 1 baguette, sliced into 1/2-inch thick rounds (approx. 24 slices)
- 2 tablespoons olive oil (30 ml)
- Salt and freshly ground black pepper to taste
- 12 ounces (340g) fresh or frozen cranberries
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) water
- 1 tablespoon orange zest
- 1/4 teaspoon ground cinnamon
- 4 ounces (115g) Brie cheese, rind removed, sliced into small pieces
- 2 tablespoons fresh rosemary, finely chopped
Instructions:
- Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and season with salt and pepper.
- Arrange baguette slices on a baking sheet and bake for 8-10 minutes, or until golden brown and lightly toasted.
- Combine cranberries, sugar, water, orange zest, and cinnamon in a saucepan.
- Bring to a simmer over medium heat, stirring occasionally. Cook until cranberries have burst and the sauce has thickened (about 10-12 minutes). Let cool slightly.
- Top each toasted baguette slice with a piece of Brie cheese.
- Spoon a small amount of cranberry sauce over the Brie.
- Sprinkle with fresh rosemary and serve immediately.
