Ingredients:
- 2 (15-ounce) cans black beans, rinsed and drained
- 1/4 cup lime juice, freshly squeezed
- 2 tablespoons olive oil
- 1/4 cup chopped fresh cilantro
- 1-2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 2 tablespoons water, or more as needed for consistency
- Diced red onion (optional)
- Crumbled cotija cheese or feta (optional)
- Sliced jalapeños (optional)
- A drizzle of olive oil (optional)
- Extra chopped cilantro (optional)
Instructions:
- Rinse and drain the black beans thoroughly. Chop the cilantro. Mince the garlic (or roast – see tips).
- Place the black beans, lime juice, olive oil, cilantro, garlic, cumin, smoked paprika, salt, and pepper into a blender or food processor.
- Process until completely smooth, adding water a tablespoon at a time if needed to reach your desired consistency.
- Taste the spread and adjust seasonings as needed (more salt, lime juice, or spices).
- Transfer the spread to a serving bowl. Top with desired garnishes and serve immediately, or cover and chill for later.
