Ingredients:
- 1 pound (450g) cooked shrimp, peeled and deveined
- 1 cup (150g) cherry tomatoes, quartered
- 1 medium cucumber, diced
- 1 avocado, diced
- ½ cup (75g) red onion, finely chopped
- 1 jalapeño, deseeded and finely diced
- 1/4 cup (60ml) fresh lime juice
- 1/4 cup (60ml) ketchup
- 1/4 cup (15g) fresh cilantro, chopped
- Salt and pepper, to taste
- Lime wedges, for garnish
- Tortilla chips, for garnish
Instructions:
- Dice the cucumber, avocado, and red onion. Quarter the cherry tomatoes. Finely chop the jalapeño, if using.
- In a large mixing bowl, combine the cooked shrimp, tomatoes, cucumber, avocado, onion, and jalapeño.
- In a separate small bowl, whisk together lime juice, ketchup, chopped cilantro, salt, and pepper.
- Pour the dressing over the shrimp mixture. Gently toss to combine without mashing the avocado.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve in individual cups or on a platter with lime wedges and tortilla chips on the side.
