Ingredients:

  • 1 pound (450g) cooked shrimp, peeled and deveined
  • 1 cup (150g) cherry tomatoes, quartered
  • 1 medium cucumber, diced
  • 1 avocado, diced
  • ½ cup (75g) red onion, finely chopped
  • 1 jalapeño, deseeded and finely diced
  • 1/4 cup (60ml) fresh lime juice
  • 1/4 cup (60ml) ketchup
  • 1/4 cup (15g) fresh cilantro, chopped
  • Salt and pepper, to taste
  • Lime wedges, for garnish
  • Tortilla chips, for garnish

Instructions:

  1. Dice the cucumber, avocado, and red onion. Quarter the cherry tomatoes. Finely chop the jalapeño, if using.
  2. In a large mixing bowl, combine the cooked shrimp, tomatoes, cucumber, avocado, onion, and jalapeño.
  3. In a separate small bowl, whisk together lime juice, ketchup, chopped cilantro, salt, and pepper.
  4. Pour the dressing over the shrimp mixture. Gently toss to combine without mashing the avocado.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Serve in individual cups or on a platter with lime wedges and tortilla chips on the side.
