Ingredients:

  • 1 ¼ cups (155 g) all-purpose flour
  • ½ tsp salt
  • 1 tsp sugar (optional, for sweet pies)
  • ½ cup (115 g) unsalted butter, cold and cubed
  • 3-4 tbsp (45-60 ml) ice water

Instructions:

  1. In a mixing bowl, whisk together flour, salt, and sugar.
  2. Add cold, cubed butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  3. Drizzle in ice water, one tablespoon at a time, mixing gently until the dough comes together.
  4. Shape the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  5. After chilling, roll out the dough on a floured surface until it’s about 12 inches in diameter.
  6. Carefully place the rolled dough into the pie plate, trimming any excess edges.
  7. If your recipe calls for a pre-baked crust, dock the bottom with a fork and bake at 375°F (190°C) for 20-30 minutes or until golden brown.
