Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 tablespoon (12g) sugar
  • 1 teaspoon (4g) baking powder
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1 cup (240ml) buttermilk
  • 1 large egg
  • 2 tablespoons (30ml) melted unsalted butter
  • 1/2 teaspoon (2g) ground cinnamon (optional)
  • Butter or oil for greasing the pan

Instructions:

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, whisk together buttermilk, egg, and melted butter.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined (a few lumps are okay).
  4. Let the batter rest for 10 minutes.
  5. Preheat the Darto pan or griddle over medium heat.
  6. Grease lightly with butter or oil.
  7. Pour about 1/4 cup (60ml) of batter into the pan for each cake.
  8. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
  9. Stack the cakes on a plate and serve warm with your choice of toppings.
