Ingredients:
- 8 large eggs
- ½ cup whole milk or dairy-free milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup diced vegetables (bell peppers, spinach, or mushrooms)
- ½ cup shredded cheese (cheddar, mozzarella, or feta)
- ½ cup cooked and crumbled sausage or bacon (optional)
- Chopped chives or parsley (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the muffin tin with non-stick spray or oil.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper.
- Fold in diced vegetables, cheese, and optional meat.
- Pour the egg mixture evenly into each muffin cup, filling about ¾ full.
- Place in the oven and bake for 20-25 minutes until puffed and set. Check for doneness—insert a toothpick; it should come out clean.
- Allow to cool slightly before removing from the tin. Serve warm or store in an airtight container.
