Ingredients:

  • 8 large eggs
  • ½ cup whole milk or dairy-free milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup diced vegetables (bell peppers, spinach, or mushrooms)
  • ½ cup shredded cheese (cheddar, mozzarella, or feta)
  • ½ cup cooked and crumbled sausage or bacon (optional)
  • Chopped chives or parsley (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the muffin tin with non-stick spray or oil.
  3. In a mixing bowl, whisk together eggs, milk, salt, and pepper.
  4. Fold in diced vegetables, cheese, and optional meat.
  5. Pour the egg mixture evenly into each muffin cup, filling about ¾ full.
  6. Place in the oven and bake for 20-25 minutes until puffed and set. Check for doneness—insert a toothpick; it should come out clean.
  7. Allow to cool slightly before removing from the tin. Serve warm or store in an airtight container.
