Ingredients:
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 1 large carrot, finely diced
- 1 medium red bell pepper, diced
- 3 cloves garlic, minced
- 1 cup pumpkin puree
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp cinnamon
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 cups vegetable broth
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the diced onion, carrot, and bell pepper; cook for 5-7 minutes until vegetables are softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the pumpkin puree, chili powder, cumin, smoked paprika, and cinnamon. Stir constantly for 2-3 minutes to toast the spices.
- Pour in the diced tomatoes, drained beans, and vegetable broth. Stir well to combine.
- Bring to a boil, then reduce heat to low and simmer uncovered for 20-25 minutes until the chili reaches a thick consistency.
