Ingredients:

  • 2 cups (480 ml) Blanco Tequila (100% Agave)
  • 3 cups (720 ml) Fresh Pink Grapefruit Juice
  • ½ cup (120 ml) Fresh Lime Juice
  • ½ cup (120 ml) Simple Syrup OR Agave Nectar
  • ½ cup (120 ml) Filtered Water
  • 3–4 cups (720–960 ml) Club Soda or Sparkling Water (cold)
  • 2 Tbsp (30 g) Kosher Salt or Flaky Sea Salt
  • 1 tsp (5 ml) Lime Zest
  • Ice (as needed)
  • Grapefruit Slices and Lime Wedges (for garnish)

Instructions:

  1. Juice the grapefruits and limes. Pour the tequila, grapefruit juice, lime juice, simple syrup (or agave), and filtered water into a large pitcher. Stir vigorously for about 30 seconds to fully incorporate the sweetener.
  2. Cover the pitcher and refrigerate for a minimum of 30 minutes. This mandatory chilling time allows the flavors to fully marry and ensures the drink is stone-cold upon serving.
  3. On a shallow plate, combine the salt and the finely grated lime zest. Take a lime wedge and run it around the rim of each serving glass. Immediately dip the wet rim into the salt mixture, rotating gently until evenly coated. Set the glasses aside.
  4. Fill the prepared glasses and the pitcher generously with fresh ice. Just before serving, pour the cold club soda or sparkling water into the pitcher. Do not stir aggressively; a quick, gentle turn with a spoon is sufficient to combine the liquid without flattening the bubbles. Pour the Paloma mix into the prepared glasses and garnish each with a thin slice of grapefruit or a lime wedge on the rim. Serve immediately.
