Ingredients:

  • 2 cups fresh peas (about 300g; frozen peas can be used if needed)
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled (about 75g)
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons olive oil (45ml)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon honey (5g)
  • Salt and pepper, to taste

Instructions:

  1. If using fresh peas, shell them. If using frozen peas, thaw and drain.
  2. Finely chop the red onion, dice the cucumber, and halve the cherry tomatoes.
  3. In a mixing bowl, combine peas, red onion, tomatoes, cucumber, feta cheese, and mint.
  4. In a separate small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  5. Pour the dressing over the salad and gently toss to combine.
  6. Taste and season with additional salt and pepper if necessary.
  7. Transfer to a serving bowl or plate and enjoy right away, or chill for 30 minutes for flavors to blend.
