Ingredients:
- 2 cups fresh peas (about 300g; frozen peas can be used if needed)
- 1 small red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled (about 75g)
- 1/4 cup fresh mint leaves, chopped
- 3 tablespoons olive oil (45ml)
- 1 tablespoon lemon juice (15ml)
- 1 teaspoon honey (5g)
- Salt and pepper, to taste
Instructions:
- If using fresh peas, shell them. If using frozen peas, thaw and drain.
- Finely chop the red onion, dice the cucumber, and halve the cherry tomatoes.
- In a mixing bowl, combine peas, red onion, tomatoes, cucumber, feta cheese, and mint.
- In a separate small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Taste and season with additional salt and pepper if necessary.
- Transfer to a serving bowl or plate and enjoy right away, or chill for 30 minutes for flavors to blend.
