Ingredients:

  • 4 large ripe but firm Bananas
  • 8 Popsicle Sticks or Skewers
  • 12 oz (340 g) White Chocolate chips or bar, good quality melting chocolate
  • 1 Tbsp (15 ml) Refined Coconut Oil
  • 2 oz (55 g) Dark Chocolate (60%+ cacao) for piping
  • 16 Edible Googly Eyes, small size

Instructions:

  1. Prep the Bananas: Peel the bananas and slice each one horizontally in half (yielding two shorter pops per banana).
  2. Insert Sticks: Gently insert a popsicle stick about halfway into the flat, cut end of each banana half.
  3. Initial Chill (The Foundation): Lay the bananas on a baking sheet lined with parchment paper. Place in the freezer for a minimum of 30 minutes. This ensures the warm melted chocolate adheres quickly without sliding off.
  4. Melt the Coating: Combine the white chocolate and coconut oil in a deep mug or bowl. Melt slowly using 30-second bursts in the microwave (stirring between each burst), or over a gently simmering double boiler. Stir until completely smooth and thin.
  5. Dip the Pops: Remove the chilled bananas from the freezer. Working quickly, dip each banana completely into the melted white chocolate, ensuring the coating is smooth. Allow excess chocolate to drip off immediately.
  6. Decorate as Ghouls: Immediately place two edible eyes onto the wet chocolate coating of half of the dipped bananas.
  7. Set the Ghouls: Return the Ghoul pops to the parchment-lined tray and place back into the freezer immediately.
  8. Prepare Detailing Chocolate: Melt the dark chocolate separately. Transfer the melted dark chocolate to a small piping bag or a zip-top bag with the corner snipped very thinly.
  9. Create the Mummies: Using the dark chocolate piping bag, drizzle lines horizontally across the remaining white chocolate-dipped bananas, leaving a small gap near the top for the eyes. Add the edible eyes into the gap (using a tiny drop of dark chocolate as 'glue' if necessary).
  10. Final Set: Return all decorated pops to the freezer. Freeze for at least 2 hours, or until completely solid. Serve straight from the freezer.
