Ingredients:
- 2 cups (180g) old fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 cup (240ml) unsweetened almond milk
- 1 large (50g) egg
- 1/4 cup (60ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 2 tbsp (28g) melted coconut oil
- 1 1/2 cups (225g) mixed berries
- 1 tbsp (15g) cornstarch
- 1 tbsp (12g) lemon juice
Instructions:
- Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt until no clumps remain.
- Add the almond milk, egg, maple syrup, vanilla extract, and melted coconut oil to the dry ingredients. Stir until just combined, avoiding overmixing.
- In a separate small bowl, toss the mixed berries with cornstarch and lemon juice. Grease an 8x8 inch baking dish and spread the berry mixture evenly across the bottom.
- Pour the oat batter over the berries and smooth the top with a spatula.
- Bake on the center rack for 35–40 minutes, or until the edges pull away from the sides and the top is mahogany-colored and firm.
