Ingredients:

  • 2 cups (180g) old fashioned rolled oats
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1 cup (240ml) unsweetened almond milk
  • 1 large (50g) egg
  • 1/4 cup (60ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (28g) melted coconut oil
  • 1 1/2 cups (225g) mixed berries
  • 1 tbsp (15g) cornstarch
  • 1 tbsp (12g) lemon juice

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt until no clumps remain.
  2. Add the almond milk, egg, maple syrup, vanilla extract, and melted coconut oil to the dry ingredients. Stir until just combined, avoiding overmixing.
  3. In a separate small bowl, toss the mixed berries with cornstarch and lemon juice. Grease an 8x8 inch baking dish and spread the berry mixture evenly across the bottom.
  4. Pour the oat batter over the berries and smooth the top with a spatula.
  5. Bake on the center rack for 35–40 minutes, or until the edges pull away from the sides and the top is mahogany-colored and firm.
