Ingredients:
- 2 large ripe tomatoes, diced (about 500g / 1.1 lbs)
- 1/2 medium white onion, finely diced (about 75g / 2.6 oz)
- 1-2 jalapeños, seeded and finely minced (to taste, start with 1 - about 15g / 0.5 oz)
- 1/4 cup packed fresh cilantro leaves, chopped (about 10g / 0.35 oz)
- 1 lime, juiced (about 30ml / 1 fl oz)
- 1/2 teaspoon kosher salt (about 3g / 0.1 oz)
- 1/4 teaspoon ground cumin (optional, about 1g / 0.03 oz)
Instructions:
- Dice the tomatoes into small, even pieces.
- Finely dice the white onion.
- Seed and finely mince the jalapeño. Remember to wash your hands thoroughly afterward!
- Roughly chop the fresh cilantro.
- In a medium mixing bowl, combine the diced tomatoes, onion, jalapeño, and cilantro.
- Add the lime juice, salt, and cumin (if using).
- Gently mix all the ingredients together until well combined. Taste and adjust seasoning as needed, adding more salt or lime juice to your preference.
- For best flavour, cover the salsa and chill in the refrigerator for at least 30 minutes to allow the flavours to meld.
