Ingredients:

  • 2 large ripe tomatoes, diced (about 500g / 1.1 lbs)
  • 1/2 medium white onion, finely diced (about 75g / 2.6 oz)
  • 1-2 jalapeños, seeded and finely minced (to taste, start with 1 - about 15g / 0.5 oz)
  • 1/4 cup packed fresh cilantro leaves, chopped (about 10g / 0.35 oz)
  • 1 lime, juiced (about 30ml / 1 fl oz)
  • 1/2 teaspoon kosher salt (about 3g / 0.1 oz)
  • 1/4 teaspoon ground cumin (optional, about 1g / 0.03 oz)

Instructions:

  1. Dice the tomatoes into small, even pieces.
  2. Finely dice the white onion.
  3. Seed and finely mince the jalapeño. Remember to wash your hands thoroughly afterward!
  4. Roughly chop the fresh cilantro.
  5. In a medium mixing bowl, combine the diced tomatoes, onion, jalapeño, and cilantro.
  6. Add the lime juice, salt, and cumin (if using).
  7. Gently mix all the ingredients together until well combined. Taste and adjust seasoning as needed, adding more salt or lime juice to your preference.
  8. For best flavour, cover the salsa and chill in the refrigerator for at least 30 minutes to allow the flavours to meld.
