Ingredients:
- 2 lbs Top Sirloin, cut into 1-inch cubes
- 1 tbsp Avocado oil
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Coarse sea salt
- 1/2 tsp Cracked black pepper
- 2 tbsp Extra virgin olive oil
- 3 cloves Garlic, finely minced
- 1 tbsp Fresh rosemary, minced
- 1 tbsp Fresh thyme, minced
- 1/2 tsp Lemon zest
Instructions:
- Pat the cubed sirloin bone-dry with paper towels to ensure a crisp sear. In a large bowl, toss the cubes with avocado oil, smoked paprika, garlic powder, coarse sea salt, and black pepper until evenly coated.
- Allow the seasoned steak cubes to sit at room temperature for 10 minutes to temper, ensuring an even cook.
- Preheat the air fryer or convection oven to 400°F (200°C) for at least 5 minutes.
- Arrange the steak bites in a single layer in the air fryer basket, ensuring no pieces are touching to allow for 360-degree air circulation.
- Air fry at 400°F for 6–8 minutes. At the 4-minute mark, shake the basket vigorously to rotate the bites.
- Check for an internal temperature of 135°F (57°C) for medium-rare using a digital meat thermometer.
- While the steak is cooking, gently warm the extra virgin olive oil in a small saucepan over low heat. Add the minced garlic, rosemary, thyme, and lemon zest, infusing the oil for 2-3 minutes.
- Toss the hot steak bites in the garlic-herb finishing oil and serve immediately with toothpicks.
